Salsa

As promised, here's a little sneak peek at one of the recipes in my upcoming cookbook.  I don't know about the weather where you live, but here in the Midwest, it's been ridiculously hot and I've been sticking to food I can make without having to stand in front of a hot stove. This simple, easy salsa recipe is perfect for the summer heat and so easy and inexpensive to make, you won't ever buy salsa again.

People are always raving about my salsa. I've seen many well intended individuals sit down to eat just a little bit and then find it impossible to stop eating. On more than one occasion an empty container has been returned to me with a tale of disbelief at having eaten the whole thing in one sitting.

The secret?  It's not using fresh tomatoes like so many people think, it's the fresh jalapeño, cilantro, onion and lime that make this super simple dish so amazingly delicious.  It's made with whole ingredients, which give you the added bonus of eating healthy and well.  Plus, you can make this a totally sustainable recipe by using local ingredients, or growing your own.


This is all you need:


2 large cans of tomatoes - drained

1 or 2  jalapeño peppers  
1/4 Cup of fresh cilantro 
1/2 of a large onion
Juice of one lime
zest of one lime
sea salt and pepper to taste

I use a food processor. A blender works just as well.
Chop the onions and peppers into chunks and mix in the food processor. The heat of a pepper is in the seeds and pulp, so you may want to remove them to control the heat.  Then add the cilantro, tomatoes (drain the juice and save it for soup), lime juice, lime zest and some salt/ pepper to taste. Just pulse a little, it doesn't take much to break down the tomatoes and it's nice if they're a little chunky. 
All set!  It's best if you can let it sit
in the fridge for a couple of hours
before serving.

Keeps For Two Weeks

This will keep in the fridge and can be used on everything from eggs to burritos. But, the best way to eat this yummy salsa is with your favorite white or yellow corn tortilla chips.
